I never bought lobster before I moved to Jamaica. I considered it too expensive.
Now that my husband and I dive often here, we’re enjoying the culinary benefits.
Last weekend, we went diving with some friends in Port Royal, a historic town outside of Kingston, Jamaica. We caught some lobster and baked it in the oven that evening with a garlic butter sauce. Juicy and succulent–a simple, yet amazing meal.
Ingredients:
lobster
garlic cloves, minced
butter
parsley, chopped
Your choice how much lobster you want to cook. For every lobster, use 2 garlic cloves and 2-3 tablespoons of butter.
Preheat the oven to 350 degrees F. Cut the lobster in half lengthwise, from the head to the tail. Arrange on a baking tray.
Heat up the butter in a small pan on the stove until melted, then add the garlic. Pour the mix onto the lobster halves in their shells, then garnish with the parsley.
Cook for about 10 minutes, or until the lobster flesh is firm yet juicy. Serve with a spritz of fresh lime.
