Nasi Goreng

Nasi GorengNasi goreng is Indonesian fried rice. It’s typically cooked with chicken and seafood, usually shrimp. My husband and I like to mix chicken with brown rice and serve it with lobster and lime on the side. We also like to fry up shrimp chips for fun to go with the dish.

Ingredients:

1.25 cups brown rice, cooked
1 medium onion, sliced
4 large chicken thighs, deboned, skinned and cut into small cubes
3 garlic cloves, minced
mixed vegetables (your choice how much to include)
3 tsp. sambal
1 lime, sliced
cilantro
1 packet frozen lobster chunks (you can substitute with other seafood)

Heat up your choice of oil in a large pan and add the onion and chicken. The chicken will cook on medium high heat in about 10 min.

While the chicken is cooking, boil water in a small pot and cook the lobster in boiling water for about 2 min. Drain the lobster.

In the large pan, stir in the garlic when the chicken is almost cooked. Stir in the vegetables when the chicken is cooked, then stir in the rice. Add the sambal and stir the rice mixture thoroughly. Serve with cilantro as garnish, with lime and lobster on the side.

Shrimp chips are optional. You can buy them at Asian grocery stores. They’re available as ready made, but it’s more fun to tackle the do-it-yourself version. It only takes seconds to fry up.
