A few weekends ago, I had a plan to go out for a run, then order takeout pizza from a local restaurant. When I got back from the run, I was tired and didn’t feel like waiting for my pie to be cooked by someone else when I could cook a pie at home that would suit exactly what I wanted.
As you can see from the photo, my homemade pizza was much more luxurious than you’d get at a restaurant. I was hungry after my run, so I topped my pizza with a lot of large shrimp, green bell pepper slices for veg and fresh mozzarella.
Ingredients:
1/2 pre-made pizza dough ball
1/3 bag large shrimp, peeled
1 bell pepper, sliced
marinara to taste
1/2 fresh mozzarella ball, sliced
olive oil to taste
salt and pepper to taste
red chili flakes to taste
Preheat oven to 425 deg. F.
Flatten the dough into desired thickness and placed in a baking tray that has a thin layer of olive oil on the bottom so the dough doesn’t stick to the tray. Cook in the oven and check on it every 5 min. Remove from heat when you can stick a fork in the dough and it comes out clean. Keep oven heated.
Cook the bell pepper covered for a steam effect (15-30 min., depending on desired texture). Set aside.
Saute the shrimp without overcooking (about 5 min.).
Paint the cooked dough with marinara, then top with the peppers, shrimp and mozzarella. Drizzle olive oil over the pie and finish off in the oven until the cheese melts (about 5 min.). Sprinkle on salt, pepper and chili to taste before serving.
