Roast Chicken Thighs with Potatoes and Olives

This is an elegant, simple dish that takes only a few minutes of prep work. The rest is done by the oven. The olives give it a bit of a Mediterranean flair and a bite of brine/tartness.


1 pack chicken thighs
3-4 small potatoes, cut into quarters
butter to taste
olives to taste

Preheat the oven 350 deg. F.

Place the chicken and potatoes in an oven dish/pan, and distribute butter slices around the dish/pan. The butter will mix with the chicken juices.

Cook for 30-45 min. The chicken should be cooked through, and the skin should be golden and crispy.

When cooked, garnish with olives.
