It takes a while to settle in after moving to another country. Making comfort food at home is one of the ways to start getting used to the new digs.
I’ve fallen into quite a groove with variations of mac and cheese.
This dish uses shrimp as the protein, green peas for nutrition and color, and generous amounts of cheese, milk and butter to have you coming back for seconds.
Ingredients:
10-15 shrimp
1/2 bag of spiral noodles
1/4 bag of peas
milk to taste
butter to taste (I recommend 4 tbsp)
aged cheddar (I recommend 3/4 of a block)
salt and pepper to taste
Bring water to a boil in a large pot, and cook the noodles to al dente (about 7-10 min.). Drain and set aside.
Saute the shrimp in a large pan, then stir in the noodles and the rest of the ingredients. Keep on low heat until the cheese melts, then give a final stir. Garnish with parsley.
