This is my take on an Italian classic. The prep is easy and relatively quick, and the result is a juicy filling.
2 squid tubes, cleaned
parmesan to taste
salt and pepper to taste
Saute enough ground beef and peas with salt and pepper to stuff the squid tubes. Add parmesan chunks when the beef is almost cooked, and melt the cheese.
Stuff the squid with the filling, then cinch the opening with a toothpick or a piece of bamboo skewer.
Grill or saute the squid on the stove top for 2-5 min. a side.
