An easy weeknight meal that packs a flavor punch from the chorizo and kimchi.
2 cups brown rice
2 chorizo links, sliced
leeks, diced (optional)
kimchi to taste
Bring 4 cups water to a boil in a large pot, then add the rice and lower the heat to simmer until cooked.
While the rice is cooking, saute the chorizo in a large pan
For a subtle onion flavor, cut a chunk of a leek stalk and dice, then mix in with the sausage. Add the cooked rice, and mix ingredients thoroughly in pan.
Serve with kimchi on top.
