Barley with shrimp

Barley is a nutritious grain that’s full of fiber and pairs well with a lot of proteins and veg. Trader Joe’s has barley that only takes 10-15 min. to cook. I used it to make a quick and elegant dinner.

The shrimp and leeks add a bit of color and subtle flavors.

The bigger flavors comes from melted aged white cheddar chunks and tangy, briny bits of Kalamata olives.

Ingredients:

1 package quick cook barley
10-15 shrimp
1 leek chunk, sliced
1 handful Kalamata olives, sliced
Aged white cheddar to taste
Salt and pepper to taste
Paprika to taste

Bring water to a boil and cook the barley.

While the barley is cooking, saute the leeks and shrimp.

Drain the cooked barley, and mix all the ingredients thoroughly in a large pan. It’s ready to serve when the cheese melts and is mixed in.
