Cast-Iron Blondie with Chia Seeds

Ovens in Fiji are typically smaller than those in North America. It’s taking a while to figure our oven out. Simple things like cookies, which should only take 10-12 min. to cook, take longer here, especially in a Pyrex dish. The few times I’ve tried baking cookies, they’ve all ended up mushy using my usual recipe.

So, I looked to our cast-iron pan to see if that would distribute and hold heat better than a Pyrex. Turns out it does in our Fiji oven. What I’m baking behaves more like I expect it to.

The first test: blondies. I added chia seeds for nutrition.


1 cup flour
1 cup sugar
1 tsp. salt
1 large egg (or 2 small eggs)
chia seeds (sprinkle liberally)
canola oil

Preheat the oven to 350 deg. F (180 deg. C here in Fiji).

Mix the flour, sugar, salt, eggs and chia in a bowl, then add canola oil in stages (try 1/4 cup oil to start), massaging the oil into the other ingredients by hand until you get a consistency like cookie dough.

Line the cast-iron with oil to prevent the dough from sticking, then place the dough in the pan and smooth out to flatten through the pan.

Cook for 20-25 min., or until you can stick a fork in that comes out clean.
