I’m not a vegan, but I’m open to inspiration from any cuisine. These fig-and-date balls are vegan, and they are so easy to make. Just two ingredients: a pack of dried figs and a pack of pitted dates.
If your figs are tough, boil them in water until soft. Drain, then blitz in a food processor with the dates until you get a paste-like texture.
Shape the dough into balls.
A tip: When you’re ready to shape the balls, wash your hands and don’t dry them–the water will help shape balls that have a smooth exterior. Otherwise, your palms will stick to the dough and cause a bit of a fuzzy texture on the outside.
Caution: These are natural sugar bombs, so shape into smaller balls if you want less sugar per ball.
