We had roti in the fridge, and I had the idea to make a roti-based pizza with a Mediterranean influence. This is an elegant dish that’s easy to put together.
1 can chickpeas
4 chicken thighs, deboned, deskinned and chopped
salt and pepper to taste
garlic powder to taste
feta to taste
Grind the chickpeas into a hummus in a food processor using a bit of the water in the can and adding olive oil, salt, pepper and garlic powder to taste. Place houmous in a serving bowl.
Saute the chicken until cooked, then place in a serving bowl.
Heat up the roti for 10 sec. per side on the stove top, then assemble each pizza, slathering on a layer of houmous first, then topping with chicken, feta, olives and lettuce.
