Sausage Bolognese Tostadas

Sausage bolognese tostadas

This is an Italian-Mexican mashup I created. It’s fun to assemble and eat because of the crunch from the crispy fried tortillas.

Ingredients:

1 bottle marinara
4 Italian sausages, sliced
1 small onion, chopped
1 garlic head, minced
1 can black beans, drained
salt and pepper to taste
cumin to taste
4 flour tortillas
lettuce, chopped for garnish
1 large avocado
fresh lime juice or vinegar

Heat up olive oil in a sauce pan and saute the onion and garlic for about 5 min. Pour the marinara in. Add the sausages and beans. Season with salt and pepper and cumin. Cover and simmer for about 30 min., stirring occasionally.

For the guacamole, scoop out the avocado flesh into a small bowl and season with salt and fresh lime juice or vinegar.

When the sausage bolognese is ready, prepare the tortillas by heating up canola oil in a sauce pan. Use enough oil to create a shallow pool at the bottom of the pan. Fry each tortilla in the oil until golden brown, flipping the tortilla to cook both sides.

To serve, spoon the sausage bolognese onto the tortillas and top with guacamole and lettuce.
