
Rotisserie chicken–what a great invention. It’s ready cooked, full of flavor from the natural chicken juices, and available at many supermarkets. You can make it the main event, or toss it with other ingredients if you want to get creative.
I mixed up chunks of rotisserie chicken with cooked red cargo rice and soy sauce, then topped with alfalfa sprouts for some fresh, healthful crunch.
If you’d like to add spices, I recommend black pepper, red chili flake and garlic powder.
