When we were shopping for food products for our shipment to Fiji, we picked up some fun pasta packs from Trader Joe’s. One of the shapes is called “gigli,” a cone-shaped pasta with wavy edges.
I tossed it with shrimp, bacon, peas and parmesan for a quick and easy weeknight meal.
1 pack gigli pasta
1/3 small bag of peas
4-6 bacon slices, chopped
10 medium/large shrimp, shelled
Parmesan to taste
olive oil to taste
dry basil to taste
garlic powder to taste
pepper to taste
Boil the peas and pasta in salted water until pasta is al dente (about 10 min.). Drain and set aside.
In a large pan, saute the bacon and shrimp. Stir the gigli into the pan in batches, making sure not to overwhelm the dish with excess pasta. Add the Parm, olive oil, basil, garlic power and pepper to round out the seasoning.
