Sealand Processors is a Fijian company that sells fresh and frozen fish. They have a small shop in our neighborhood, and it offers sashimi-grade tuna from time to time at a very low price for good quality.
We picked up a large block of sashimi-grade albacore tuna a few weeks ago and kept it in our freezer. We defrosted it for a simple, elegant dinner last night. Hubby sliced the block of albacore while it was still slightly frozen to help with knife work. He topped the slices with sesame seeds and served with dipping sauces of soy sauce and ponzu with wasabi.
