Pumpkin and sausage bolognese

Pumpkin is typically available at local markets in Fiji. I had the idea to incorporate it into a bolognese with locally made beef sausage.

Pumpkin is packed with nutrients, including Vitamins A and K, and it adds a subtle sweet note to the tartness of a tomato-based sauce.


1 bottle tomato sauce
1 small onion, sliced
4-6 sausages
1/4 medium pumpkin, chopped
salt and pepper to taste
basil to taste
oregano to taste

Saute the onions in a large sauce pan, then pour in the tomato sauce. Add the sausages and pumpkin. Simmer for 90 min. to 2 hr. Add salt and pepper, basil and oregano about 1 hr. into cooking.

Serve with your choice of pasta.
