We recently had leftover fries from takeout, and hubby had the idea to add them last minute to a dish I was baking with chicken and pumpkin and potato chunks. When the dish was close to being cooked, we laid the fries on top to crisp them up. They complement the colors of the dish and add another textural element.
For the seasoning, I recommend salt, pepper and paprika to taste, plus lots of olive oil so the ingredients don’t dry out.
Cook at 375 to 425 deg. until veg softens and chicken is golden brown.
I garnished with mint from our garden for a touch of freshness.
