You might be asking, what’s wahoo? It’s a meaty white fish that’s common in Fiji.
I sliced up some wahoo into chunks and tossed it with roasted pumpkin and brown rice for a hearty and healthy dish.
Oh, and I sprinkled in a generous amount of garlic salt. We bought a big jug of it, and it adds instant flavor to anything.
Plus, I stirred in fresh parsley and chives from our garden.
You can easily make this dish vegan by eliminating the wahoo.
Ingredients:
wahoo chunks
1 small onion, sliced
1/2 small pumpkin, chopped
1 cup brown rice
garlic salt to taste
pepper to taste
parsley and chives (optional)
Roast the pumpkin in the oven at 350 deg F until cooked (about 20-30 min.).
Cook the rice with a 2:1 water-to-rice ratio (about 20-30 min.).
When the pumpkin and rice are almost done cooking, saute the onion and wahoo in a large pan. When the wahoo is cooked through, stir in the pumpkin, rice, garlic salt, pepper and fresh herbs.
