Coconut Muffins with Chia and Flax Seeds

These little babies make for a sweet, delicious breakfast, snack or dessert. They make your home smell incredible. I added a chia and flax seed mix for nutrition.


1 cup flour
1 cup sugar
1 cup coconut flakes (fresh or dehydrated)
1/4 cup chia and flax seed mix
1 cup canola (or vegetable) oil
3 eggs
2 tsp. baking powder (or baking soda)
1 tsp. vanilla extract
1 tsp. salt

Preheat oven to 350 deg. F.

Mix all the ingredients in a bowl to create the batter.

Brush the cups of a muffin pan with canola oil, then fill the cups with the batter.

Cook for 20 min. (or longer, depending on oven strength). The muffins are ready when you can stick a fork cleanly into them.
