We had some kimchi left, and we used it for a Mexican dish to add tang.
This is an easy weeknight meal packed with big flavors and nutrition. There are probiotics from the kimchi and Greek yogurt, and the ground chicken and beans are full of protein. The beans also add carbs and fiber.
1 small onion, chopped
1/2 pack ground chicken
1 can refried beans
soy sauce to taste
1/2 pack cheddar, sliced
kimchi to taste
Greek yogurt to taste
chili, diced (optional)
Saute the onion in olive oil, then stir in the chicken, beans and soy sauce. Cover until the chicken cooks, then finish cooking uncovered until liquid evaporates.
Add the cheese, turn off heat, and cover for about 5 min. Stir the melted cheese through the dish.
Serve on a tortilla and add kimchi, yogurt and chili as desired. Fold in half for a soft taco.
