We planted tomatoes just a few months ago in our garden, and they’re coming up beautifully. The first batch has begun ripening, and I’ve brought in the ones that have turned red.
Our chives are also very healthy, and I snipped the top of the plant to add to an omelette with the tomatoes and cheese.
I laid the omelette on a waffle for a hearty, savory breakfast.
Ingredients:
2 small tomatoes, chopped
chives, chopped
2 eggs, beaten
cheddar cheese to taste
Saute the tomatoes until the soften. Add the chives, eggs and cheddar. Stir until omelette firms up.
