An Pho Restaurant, Suva, Fiji

An Pho is, as far as I know, the only pho (pronounced “fuh”) restaurant in Suva. It’s located on the second floor of the Garden City shopping complex.

We stopped by for a satisfying lunch last Saturday. While the interior is inviting with its modern decor, we chose to sit at one of the few outdoor tables, where the breeze was pleasant. There was a sizable crowd inside the casual eatery, but our orders and food delivery were quick. We ordered a papaya salad and beef pho. The papaya salad was light and refreshing, with mint and basil notes. The pho had a generous topping of beef slices (scotch filet and sirloin, the owner told us) and just the right amount of rice noodles for me.

The pho is served with an array of condiments: fish sauce, diced chilies, pickled garlic and moli (Fijian citrus) slices. I used a combo of fish sauce and citrus to add to my broth.
