These turned out pretty well, I must say. A nice treat during a weeknight.
I packed in a lot of veg by using carrot pulp, and I used chives from our home garden.
1 pack ground chicken
7 medium-size shrimp, peeled
1 cup carrot pulp
1 tbsp. sliced chives
fish sauce to taste (be generous with your dashes to up the umami)
1/2 pack wonton wrappers
soy sauce (as condiment)
Mix the ingredients for the filling in a bowl, then stuff the wonton wrappers with the filling.
Brush a thin coating of oil on a strainer steamer basket, then place the strainer with a cover atop a pot filled with a pool of water at the bottom. Bring the water to a boil, then place the dumplings on the strainer. Cover and cook for about 10 min. per batch.
Serve with a side of soy sauce.
