
You know when you’re standing in line at the grocery store and there are all sorts of treats lined up at the counter set up nicely to entice you to make an impulse purchase?
I remember standing in line once and seeing chocolate bark wrapped up neat and pretty, just waiting to be bought.
That’s what this treat is an homage to.
Since we have local Fijian chocolate in the pantry, I thought, why not make chocolate bark myself?
The process is very easy, and the result is beautiful and delicious.
I just heated about 250 grams of dark chocolate in a bowl for 1.5 to 2 min. in the microwave, smoothed the surface over with a finger, then sprinkled a fruit and nut mix over the top. I pressed the fruit and nuts down lightly into the chocolate, then let set in the fridge for about an hour.
When the bark sets, you’ll have an irresistible vegan dessert.
(Note: 250 grams of chocolate made a thick bark in my oval-shaped small/medium-size serving bowl. For a lighter bark that’s easier to snap into pieces, try using only 100 grams of chocolate, or try spreading out the 250 grams of chocolate in a larger serving vessel, such as a sheet pan.)
