Okra Fried Rice

This is a simple vegetarian dish that’s easy and nutritious for a weeknight. Toasted garlic will impart a lot of flavor to the rice, and the scrambled eggs add a light and fluffy texture to the dish.

If you want this vegan style, you can leave out the eggs.

Ingredients:

1 cup rice
1/2 head of garlic, minced
5-10 medium/large okras, sliced
soy sauce to taste
sesame oil to taste
sesame seeds for optional garnish

Cook the rice in a pot or rice cooker with some soy sauce in the water so the rice will absorb the flavor.

As the rice is cooking, cook the okra and garlic in a shallow pool of canola or vegetable oil in a large pan. Cover and stir occasionally. You want the garlic to be toasted, but not burnt.

When the rice is cooked, mix it thoroughly with the okra and garlic in the pan. Add sesame oil and more soy sauce if desired. Garnish with sesame seeds.
