Chicken Noodle Soup

This is an easy recipe to warm you when the weather is cold. I use ready-made udon with flavor packets and enhance the taste by simmering chicken with celery and carrots for an hour before adding the noodles.


5 cups water
2 chicken thighs
1/2 pack celery, sliced thinly
5 baby carrots, sliced thinly
3 udon packs with flavor packets

Bring the water to a boil. Add the celery, carrots and chicken, then reduce heat to simmer.

After about 30 min., remove the chicken, slice, and put back into the pot.

Simmer for another 15 to 30 min., then stir in udon and contents of flavor packets, and it’s ready to serve.
